Bread and Spreads

  • 4 slices sourdough or thick, crusty bread of choice
  • 2 tablespoons honey mustard
  • 2 tablespoons butter, softened

Fillings

  • 2 slices white cheddar cheese (cut in half to make 4 slices)
  • 4 slices deli turkey
  • Thin tomato slices from 1 medium red tomato
  • ½ cup fresh baby spinach
  • 4 strips cooked bacon

Instructions

  1. Prepare the Bread: Place 4 slices of sourdough bread on a cutting board or flat surface. Spread ½ tablespoon of honey mustard evenly over the top side of each slice.
  2. Add Cheese: Cut 2 slices of white cheddar cheese in half to make 4 half-slices. Place one half-slice of cheese on each slice of bread, covering the honey mustard.
  3. Layer Turkey: Divide the 4 slices of deli turkey so that each sandwich gets 2 slices. Place the turkey on top of 2 of the cheese-topped bread slices.
  4. Add Vegetables: Divide ½ cup of fresh baby spinach into two portions of ¼ cup each. Layer thin tomato slices and the ¼ cup of baby spinach on top of the turkey on each sandwich.
  5. Top with Bacon and Cheese: Divide 4 cooked bacon strips so that each sandwich gets 2 strips. Place the bacon on the remaining 2 slices of cheese-topped bread. Then close each sandwich by placing the bacon-topped slice on top of the turkey-topped slice, bacon side down, so each sandwich has: bread, honey mustard, cheese, turkey, tomato, spinach, bacon, cheese, honey mustard, bread.
  6. Butter the Bread: Spread ½ tablespoon of softened butter on the outside of each slice of bread (all 4 sides of each sandwich) to prepare for toasting.
  7. Toast Sandwiches: Heat a large skillet over medium heat on the stovetop. Place the assembled sandwiches in the skillet. Toast the bottom slice of bread for 3-4 minutes until golden brown, then carefully flip and toast the other side for another 3-4 minutes, or until the cheese melts and the sandwich is warmed through.
  8. Serve: Remove sandwiches from the skillet, place on serving plates, and enjoy warm with your favorite sides.
