Broth Ingredients

  • 1 leftover turkey carcass

  • 3 spring onions, roughly chopped
  • 6 whole peppercorns
  • 800ml water

  • 400g leftover roast turkey meat, shredded
  • 15g ginger, grated
  • 2 tbsp dark soy sauce
  • 1 tbsp light brown soft sugar
  • 1 lemon, juiced
  • 250300g cooked basmati rice
  • Crispy chilli oil, for serving
  • Crispy onions, for serving
  • Large handful coriander leaves, for garnish

Instructions

  1. Prepare the Stock: Break apart the turkey carcass if necessary and place all pieces into a large saucepan. Add the ginger rounds, bashed garlic cloves, coriander stalks, spring onions, and peppercorns. Pour in 800ml of water and bring to a simmer over medium heat. As the broth begins to simmer, skim off and discard any scum that rises to the surface to ensure a clear broth.
  2. Simmer the Broth: Allow the broth to simmer gently for 45 minutes to 1 hour until fragrant and the flavors meld together. Strain the broth through a large sieve into a bowl, discarding the solids left in the sieve. Return the strained liquid back to the saucepan.
  3. Add Remaining Ingredients and Heat: Stir in the grated ginger, shredded leftover roast turkey meat, dark soy sauce, light brown sugar, and a splash of fresh lemon juice into the broth. Bring the mixture back to a simmer and cook for 5 minutes until the turkey meat is piping hot. Adjust seasoning with pepper and additional lemon juice to taste.
  4. Serve: Divide the cooked basmati rice among shallow bowls. Ladle the hot turkey ginger broth evenly over the rice. Top each serving with fresh coriander leaves, crispy chilli oil, and crispy onions for added texture and flavor. Serve immediately.
