Ingredients

Scale

Pie Crust

  • 1 pie shell (homemade or store-bought, 9-inch)

Pumpkin Filling

  • 1 can (15 ounces) pumpkin puree
  • 3/4 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1 cup heavy whipping cream
  • 1/4 cup bourbon

Brûlée Topping

  • 1/4 cup granulated white sugar (for brûlée topping)

Garnish (optional)

  • Fresh grated nutmeg
  • Grated orange zest
  • Small mint leaves

Instructions

  1. Prepare the Pie Crust: Preheat your oven to 375°F (190°C). Fit the pie crust into a 9-inch pie dish, pressing gently to ensure it fits snugly. Set aside while preparing the filling.
  2. Mix Pumpkin Filling: In a large bowl, whisk together pumpkin puree, brown sugar, salt, cinnamon, ginger, cloves, and nutmeg until well combined and spices are evenly distributed.
  3. Incorporate Eggs and Liquids: Beat the eggs into the pumpkin mixture one at a time, fully incorporating each before adding the next. Stir in the heavy cream and bourbon until the mixture is smooth and uniform.
  4. Fill the Pie and Bake: Pour the pumpkin filling into the prepared pie crust, smoothing the top evenly. Bake in the preheated oven for 50 to 60 minutes, or until the filling is set and a knife inserted near the center comes out clean.
  5. Cool the Pie: Remove the pie from the oven and transfer to a wire rack. Allow it to cool completely to set the filling and enhance the flavors.
  6. Create the Brûlée Topping: Before serving, sprinkle the granulated sugar evenly over the surface of the pie. Use a kitchen torch to caramelize the sugar until it forms a crisp, golden crust. Alternatively, place under a broiler for a few minutes while watching carefully to prevent burning.
  7. Serve and Enjoy: Slice the pie and garnish with fresh grated nutmeg, orange zest, and mint leaves if desired. Enjoy the perfect combination of creamy pumpkin filling and crisp brûlée topping.

Notes

  • Use a kitchen torch for the best brûlée topping; a broiler can be used but watch closely to avoid burning.
  • Allow the pie to cool completely before adding the brûlée topping to ensure a smooth finish.
  • Freshly grated nutmeg and orange zest add extra aroma and flavor as garnish.
  • You can prepare the pie crust ahead of time to save prep time.
  • Store leftovers covered in the refrigerator and consume within 3-4 days.
