Chocolate Salami

  • 100g biscuits (speculoos and digestives)
  • 50g pretzels
  • 200g dark chocolate, roughly chopped
  • 50g unsalted butter
  • 2 tbsp golden syrup
  • Pinch of salt
  • 2 tbsp icing sugar

Jazzies

  • 100g white chocolate
  • 1 tsp hundreds and thousands

Decorations

  • Chocolate coins (ruby chocolate preferred)
  • Pink or gold lustre (optional)
  • Large figs, quartered
  • Bay leaves
  • Finger wafers
  • Pink sugar mice
  • Chocolate cigarellos

Instructions

  1. Prepare dry ingredients: Place the biscuits and pretzels into a food processor and pulse until they become coarse crumbs. Alternatively, put them in a sealed bag and crush with a rolling pin to achieve a similar texture.
  2. Melt chocolate mixture: Combine the dark chocolate, unsalted butter, golden syrup, and a small pinch of salt in a heatproof bowl. Melt by microwaving in 20-second bursts, stirring in between, until smooth. Alternatively, melt the mixture in a bowl set over simmering water without letting the bowl touch the water, stirring until completely smooth.
  3. Combine chocolate with crumbs: Stir the biscuit and pretzel crumbs into the melted chocolate mixture until everything is evenly coated.
  4. Shape the chocolate salami: Spread the mixture onto a sheet of baking parchment. Using the parchment, roll the mixture into a log about 6cm in diameter. Twist the ends of the parchment around the log to secure the shape and tuck the ends underneath. Chill in the refrigerator for at least 3 hours or overnight until set.
  5. Slice the chocolate salami: Remove the log from the parchment and dust the surface with icing sugar. Use a pastry brush to remove any excess sugar. Dip a sharp knife in boiling water, wipe dry, and carefully slice the salami into 2cm-thick pieces.
  6. Make the jazzies: Melt the white chocolate using the same method as for the dark chocolate. Line a large baking sheet with baking parchment and spoon small, round blobs of melted white chocolate onto it—about 40 pieces in total. Sprinkle each with hundreds and thousands. Chill for at least 30 minutes until set.
  7. Prepare chocolate coins: Unwrap the chocolate coins. If desired, use a small paintbrush to apply pink or gold lustre dust for an elegant shine but this step is optional.
  8. Assemble the wreath: On a round serving platter, arrange the chocolate salami slices, jazzies, chocolate coins, quartered figs, bay leaves, finger wafers, pink sugar mice, and chocolate cigarellos in a circular wreath shape for a festive presentation.
