Ingredients

Scale

Steak Bites

  • 16 oz ribeye steak, cubed
  • 2 tbsp steak seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh parsley
  • 1 tbsp cooking oil (for coating steak)

Mashed Potatoes

  • 2 pounds Yukon gold potatoes, peeled and cut into chunks
  • 8 tbsp butter
  • ½ cup milk
  • 1 cup sour cream
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper

Gravy

  • 2 cups beef broth
  • 4 tbsp butter
  • 1 cube beef bouillon
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • ¼ cup cold water
  • 3 tbsp cornstarch
  • Salt and pepper to taste

Instructions

  1. Prepare the Steak: Cube a well-marbled ribeye steak into bite-sized pieces. Coat the steak cubes lightly with cooking oil, then season thoroughly with steak seasoning, garlic powder, onion powder, salt, and black pepper to ensure robust flavor.
  2. Cook the Potatoes: Peel the Yukon gold potatoes and cut them into large chunks. Place them in a pot of boiling water and cook until they are soft and easily pierced with a fork, about 15-20 minutes. Drain well.
  3. Make the Mashed Potatoes: Rice or mash the drained potatoes until smooth. Combine them with 8 tablespoons of butter, ½ cup milk, 1 cup sour cream, garlic powder, onion powder, salt, and black pepper. Mix until creamy and smooth.
  4. Prepare the Gravy: In a saucepan, combine beef broth, 4 tablespoons butter, beef bouillon cube, garlic powder, onion powder, and Worcestershire sauce. Bring to a simmer over medium heat, stirring occasionally.
  5. Thicken the Gravy: In a small bowl, mix ¼ cup cold water with 3 tablespoons cornstarch to make a slurry. Gradually whisk the slurry into the simmering broth, stirring continuously until the gravy thickens and becomes smooth. Season with salt and pepper to taste.
  6. Cook the Steak Bites: Heat a skillet over high heat and add the seasoned steak cubes. Cook, stirring every couple of minutes, until the steak is browned on all sides, about 5-7 minutes.
  7. Finish the Steak Bites: Add 2 tablespoons butter, minced garlic, fresh thyme, and fresh parsley to the skillet. Stir well to coat the steak bites thoroughly in the herb and garlic butter mixture. Cook for an additional 1-2 minutes for flavor melding.
  8. Assemble the Dish: Serve the flavorful steak bites over a bed of creamy mashed potatoes, then generously top with the rich homemade beef gravy. Garnish with extra fresh herbs if desired.

Notes

  • Use a well-marbled ribeye steak for maximum tenderness and flavor.
  • Adjust seasoning to taste, especially salt and pepper.
  • Do not overcook potatoes to maintain a creamy texture after mashing.
  • Ensure gravy is whisked well to avoid lumps when adding the cornstarch slurry.
  • Fresh herbs like thyme and parsley add bright flavor but can be substituted with dried if necessary.
  • Serve immediately for best taste and texture.
