  • 1/4 cup unsalted butter, room temperature

Instructions

  1. Melt the chocolate and mix: Measure the butter, peanut butter, and semi-sweet chocolate chips into a large microwave-safe bowl. Microwave in 30-second increments, stirring well between each increment until the mixture is fully combined, creamy, and smooth. Set aside to cool for 5 minutes.
  2. Prepare the baking surface: Lay a sheet of aluminum foil over a half sheet pan (approximately 13 x 18 inches). Use heavy-duty foil if possible and ensure the foil drapes over the sides. Place a sheet of parchment paper on top of the foil.
  3. Add coconut base: Sprinkle 1/4 cup of the unsweetened coconut lengthwise down the center of the parchment paper and set aside.
  4. Combine marshmallows: Stir the mini marshmallows into the cooled melted chocolate mixture, making sure every marshmallow is thoroughly coated.
  5. Form the log: Spoon the marshmallow and chocolate mixture into a large log shape down the center of the parchment paper, over the coconut base.
  6. Top with coconut: Sprinkle the remaining 1/4 cup of coconut over the top and along the sides of the marshmallow log.
  7. Wrap the log: Fold one side of the parchment paper up over the log, then fold the opposite side so they slightly overlap. Next, fold the aluminum foil over the parchment paper, then firmly roll the entire log, gently pressing to compact the mixture. Twist the foil ends to seal tightly.
  8. Chill the log: Transfer the wrapped log to the refrigerator for at least 2 hours to set.
  9. Slice and serve: Remove from the refrigerator, unwrap, and cut into 1/3-inch slices for serving.
