Instructions

  1. Preheat the skillet: Heat a skillet or griddle over medium-high heat to get it hot enough for cooking the beef and toasting the tortillas evenly.
  2. Press and season the beef: Take a small handful of ground beef and press it directly onto one half of each tortilla, flattening it down like a smashburger patty. Season generously with salt, pepper, and garlic powder for flavor.
  3. Cook the beef side: Place the beef-side down on the hot skillet and cook for 2–3 minutes, allowing the meat to brown nicely and develop a crisp edge.
  4. Flip, add cheese, and fold: Flip the tortilla so the cooked beef side is up. Quickly sprinkle shredded cheese over the beef, then fold the tortilla in half to enclose the filling.
  5. Grill the quesadilla: Cook both sides of the folded quesadilla until the tortilla is golden and crispy and the cheese inside has melted, about 1–2 minutes per side. Adjust heat as necessary to avoid burning.
