Ingredients

Scale

Beef and Cooking Ingredients

  • 34 lbs. beef chuck roast
  • 1 oz. Lipton onion soup mix
  • 6 garlic cloves, peeled and left whole
  • 15 oz. can beef broth
  • 3 Tbsp. Worcestershire sauce
  • ½ tsp. black pepper

Horseradish Sauce

  • 1 cup sour cream
  • 1 Tbsp. milk or buttermilk
  • 2 Tbsp. cream horseradish
  • ½ tsp. salt
  • 1 tsp. Worcestershire sauce

Instructions

  1. Add the chuck roast: Place the 3-4 lbs. beef chuck roast into the slow cooker, spreading it evenly to ensure it cooks uniformly.
  2. Season with onion soup mix: Sprinkle the entire 1 oz. packet of Lipton onion soup mix evenly over the roast for flavor infusion.
  3. Add garlic cloves: Place the 6 peeled garlic cloves on top of the roast to infuse aromatic heat during cooking.
  4. Pour liquids: Pour in the 15 oz. beef broth and 3 tablespoons of Worcestershire sauce over the roast and season with ½ teaspoon black pepper.
  5. Cook low and slow: Cover and cook on the LOW setting of your slow cooker for 9 hours, letting the beef become tender and flavorful.
  6. Prepare horseradish sauce: While the beef is cooking, combine 1 cup sour cream, 1 tablespoon milk or buttermilk, 2 tablespoons cream horseradish, ½ teaspoon salt, and 1 teaspoon Worcestershire sauce in a small bowl. Stir until smooth, then refrigerate until ready to serve.
  7. Shred the beef: When done cooking, remove the roast and shred it using two forks, discarding any excess fat. You may shred the meat directly in the slow cooker or on a separate plate.
  8. Toast buns and assemble: Toast sandwich buns if desired. Strain some of the cooking liquid from the beef and pile the shredded meat onto the buns.
  9. Add horseradish sauce and serve: Spoon some of the chilled horseradish sauce over the beef sandwiches, then serve immediately and enjoy the rich, tangy flavors.

Notes

  • For extra flavor, consider adding a splash of red wine or balsamic vinegar to the slow cooker.
  • If you prefer a spicier horseradish sauce, increase the amount of cream horseradish to taste.
  • Leftover shredded beef can be stored in the refrigerator for up to 3 days or frozen for longer storage.
  • Serve with pickles or a side of coleslaw for added crunch and balance.
  • To make this recipe gluten-free, verify that the onion soup mix and Worcestershire sauce you use do not contain gluten.
