Vegetables

Liquids & Seasonings

  • 2 Tbsp. apple cider vinegar
  • 2 bay leaves
  • 8 cups water
  • 2 tsp. grated ginger
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt (add to taste)

Instructions

  1. Broil the Bones: Preheat the oven to broil. Place the beef bones on a sheet pan and broil them for about 5 minutes on each side, or until well browned to enhance flavor.
  2. Combine Ingredients in Slow Cooker: Transfer the browned bones to the slow cooker. Add the quartered onion, halved garlic head, chopped carrots, celery, bay leaves, apple cider vinegar, and water.
  3. Slow Cook the Broth: Cover the slow cooker and cook on low heat for 12 hours or longer to extract maximum flavor and nutrients from the bones.
  4. Strain the Broth: After cooking, strain the broth through a fine strainer into a large bowl, discarding the solids. Press the vegetables to release all their juices.
  5. Season and Serve: Stir in grated ginger, lemon juice, and salt to taste. Serve the broth immediately or refrigerate/freeze for later use. Optionally skim off fat before serving.
