Pizza Dough
- 1 recipe homemade pizza dough*
Filling and Toppings
- 2 teaspoons olive oil
- 2/3 cup pizza sauce (homemade or store-bought)
- Italian seasoning or ground basil, to taste

- 1 cup shredded mozzarella cheese
- 60–65 pepperoni slices

- Prepare Dough: Prepare your homemade pizza dough through step 4 of your dough recipe. Once ready, punch down the dough to release air bubbles, then divide it in half. On a lightly floured surface, roll each half into a large 10×12 inch rectangle.
- Add Sauce and Seasonings: Lightly brush each dough rectangle with 1 teaspoon olive oil to prevent sogginess. Using your fingers, create dimples on the dough surface to prevent bubbling. Evenly spread 1/3 cup pizza sauce on each rectangle, then sprinkle with Italian seasoning and garlic powder to taste.
- Layer Cheese and Pepperoni: Sprinkle 1/2 cup shredded mozzarella cheese on each rectangle, followed by the pepperoni slices. Carefully roll each rectangle into a tight log and place seam side down on a prepared baking sheet.
- Chill the Rolls: Refrigerate the rolled logs uncovered for at least 20 minutes. This chilling step helps the rolls hold their shape during slicing and baking.
- Preheat Oven and Prepare Baking Sheets: Preheat oven to 400°F (204°C). Line two large baking sheets with silicone mats or parchment paper for easy cleanup.
- Slice and Coat: Remove the logs from the refrigerator and slice each into twelve 1-inch pieces. Pour cornmeal into a plate or bowl.
