Peach Puree

  • 16 oz ripe peaches, peeled
  • 1/4 cup honey

  • 750 ml Prosecco
  • Peach slices for garnish (optional)

Instructions

  1. Prepare Peach Puree: Peel the skin off the ripe peaches. They can be easily peeled by hand or with a vegetable peeler. Once peeled, place the peaches in a blender.
  2. Blend Peaches and Honey: Add the honey to the peaches in the blender and blend until completely smooth, creating a fresh peach puree.
  3. Store Puree if Needed: If not using immediately, transfer the peach puree into an airtight container and refrigerate. It is recommended to use the puree within one day to maintain freshness.
  4. Assemble Bellini: Pour about 1 1/2 ounces of peach puree into each champagne flute.
  5. Add Prosecco: Fill each glass halfway with chilled Prosecco, then gently stir to mix the puree and Prosecco.
  6. Top Off Glass: Fill the remainder of each flute with Prosecco, pouring slowly to prevent overflow and maintain carbonation.
  7. Garnish and Serve: Optionally, garnish each glass with a slice of peach for decoration and serve immediately to enjoy the drink at its freshest.
