Ingredients

Scale

Meat and Vegetables

  • 1 pound lean ground beef
  • 3/4 pound Italian sausage
  • 1 large yellow onion, finely diced
  • 4 cloves garlic, minced

Soup Base

  • 2 cans (15 ounce each) tomato sauce
  • 1 can Italian style diced tomatoes
  • 1 teaspoon Italian seasonings
  • 1/2 teaspoon salt
  • 6 cups chicken broth
  • 8 ounces uncooked lasagna noodles (about 9 noodles, broken into bite-sized pieces)

Cheese Topping

  • 16 ounces whole milk ricotta cheese (about 2 cups)
  • 1/4 cup Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1/4 cup thinly sliced fresh basil
  • Fresh parsley for garnish

Instructions

  1. Cook the Meat and Aromatics: In a large heavy-bottomed pot or Dutch oven, cook the ground beef, Italian sausage, diced onions, and minced garlic over medium-high heat until the meat is browned and the onions are softened, approximately 5-6 minutes. If there is excess grease, drain it off and return the meat mixture to the pot.
  2. Add Tomato and Broth Ingredients: Stir in the tomato sauce, Italian style diced tomatoes, Italian seasonings, salt, and chicken broth. Mix well to combine and bring the mixture to a gentle simmer.
  3. Cook the Lasagna Noodles: Break the uncooked lasagna noodles into bite-sized pieces and add them directly to the simmering soup. Continue to simmer for 14-16 minutes, or until the noodles are tender and the soup has started to thicken slightly.
  4. Prepare the Cheese Topping: While the soup simmers, combine the ricotta cheese, Parmesan cheese, and Italian seasoning in a bowl. Stir until well blended and set aside.
  5. Serve the Soup: Ladle the hot lasagna soup into bowls, topping each with a generous scoop of the ricotta cheese mixture. Garnish with thinly sliced fresh basil and fresh parsley for added flavor and color.

Notes

  • For a vegetarian version, omit the ground beef and sausage and substitute with sautéed mushrooms or additional vegetables.
  • Use gluten-free lasagna noodles to make this soup gluten-free.
  • If you prefer a spicier soup, add a pinch of red pepper flakes when cooking the meat.
  • The cheese topping can be mixed into the soup or dolloped on top as preferred.
  • Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop.
