Scale

Salad Ingredients

  • 2 (15 oz) cans garbanzo beans (drained and rinsed)
  • 2 cups diced zucchini
  • 1 red bell pepper (diced)
  • 1/2 cup sweet yellow onion (finely diced)
  • 1 cup grape tomatoes (halved)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup basil (finely chopped)

Dressing

  • 1/2 cup Balsamic Dressing

Instructions

  1. Combine Ingredients: In a large bowl, add the drained and rinsed garbanzo beans, diced zucchini, red bell pepper, finely diced sweet yellow onion, halved grape tomatoes, and crumbled feta cheese. Stir gently to mix all the ingredients together evenly.
  2. Add Basil and Dressing: Sprinkle the finely chopped basil over the salad. Drizzle the balsamic dressing on top, then toss the salad carefully to coat all ingredients with the dressing for uniform flavor.
  3. Chill and Serve: Cover the bowl and refrigerate the salad for at least 10-15 minutes to allow the flavors to meld. Before serving, toss the salad again to redistribute the dressing and freshness. Enjoy your Mediterranean Chickpea Salad chilled.

Notes

  • Use fresh basil for the best flavor, but fresh mint or parsley can be substituted if preferred.
  • Make sure to rinse and drain the garbanzo beans well to reduce sodium content and improve taste.
  • This salad can be made a few hours ahead and kept refrigerated, making it great for meal prep.
  • For a vegan version, omit the feta cheese or substitute with a plant-based cheese alternative.
  • If balsamic dressing is not available, you can make your own with balsamic vinegar, olive oil, Dijon mustard, salt, and pepper.
