Ingredients

Scale

Butter & Chocolate

  • 1 1/4 sticks unsalted butter (about 1/2 cup + 2 tbsp)
  • 1/2 cup white chocolate chips

Matcha & Flavorings

  • 2 tbsp matcha powder
  • 3 tsp bourbon vanilla extract
  • 1/2 tsp kosher salt

Sweeteners

  • 1 cup granulated sugar
  • 1/4 cup brown sugar

Other Ingredients

  • 3 large eggs
  • 3/4 cup all-purpose flour

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Coat an 8×8 inch baking pan with non-stick spray and line it with parchment paper to ensure easy removal of brownies after baking.
  2. Melt the Butter: Melt the unsalted butter either in the microwave in 1-2 minute increments or on the stovetop. Be careful not to burn the butter.
  3. Combine White Chocolate and Matcha: In a medium bowl, mix the white chocolate chips with the matcha powder. Pour the melted butter over this mixture and stir until the chocolate completely melts and the mixture is smooth without lumps.
  4. Beat Sugar and Eggs: In a large mixing bowl, combine granulated sugar and brown sugar. Using an electric mixer, add the eggs and beat vigorously for 3-5 minutes. The goal is to incorporate air creating a thick, pancake batter-like consistency.
  5. Combine Ganache and Egg Mixture: Pour the white chocolate and matcha ganache into the egg and sugar mixture. Mix until thoroughly combined. Then, add the bourbon vanilla extract and stir well.
  6. Sift in Dry Ingredients and Fold: Sift together the all-purpose flour and kosher salt directly into the wet mixture. Using a rubber spatula, gently fold the ingredients until just combined. Avoid overmixing to maintain a tender texture.
  7. First Bake: Pour the batter into the prepared baking pan. Bake at 350°F for 20 minutes. After baking, carefully remove the tray with oven mitts and gently tap it 2-3 times on the counter to settle the batter.
  8. Second Bake: Return the pan to the oven and bake for an additional 15 minutes for a total baking time of 35 minutes.
  9. Cooling and Setting: Once done, remove the brownies and tap the pan 2 more times on the counter to help them set. Let the brownies rest at room temperature for at least 1 hour before slicing.
  10. Slice and Serve: Lift the brownies out of the pan by the parchment paper. Using a sharp knife, slice the brownies, cleaning the blade between each cut for neat pieces. Enjoy your matcha brownies!

Notes

  • Beating the eggs and sugar thoroughly is essential to achieve a light, airy texture.
  • Do not overmix once the flour is added to prevent dense brownies.
  • Allow sufficient cooling time for cleaner slices and better texture.
  • You can substitute bourbon vanilla extract with pure vanilla extract if unavailable.
  • Use high-quality matcha powder for the best flavor and vibrant color.
