Instructions

  1. Prepare the glaze: In a small saucepan, melt the butter over medium heat. Add the maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper. Whisk the mixture until the glaze is fully emulsified and heated through, ensuring all ingredients are well combined.
  2. Preheat and arrange carrots: Preheat your oven to 400°F (200°C). Peel the carrots and trim off the green tops. Arrange the prepared carrots evenly on a baking sheet. Drizzle most of the glaze over them, reserving 1 or 2 tablespoons for finishing. Toss the carrots gently to coat them evenly with the glaze and spread them out.
  3. Roast the carrots: Place the baking sheet in the oven and roast the carrots for 30 to 35 minutes until they become tender when pierced with a fork. Periodically check and stir the carrots to ensure they cook evenly and the glaze does not burn. If the glaze starts to darken too quickly but the carrots are not yet tender, cover the baking sheet loosely with foil and continue roasting.
