Crust
- 1 sleeve graham crackers (approximately 11 crackers), crushed
- 1/3 stick butter, melted
- 2 tablespoons sugar
Cheesecake Filling
- 4 packages (8 ounces each) cream cheese, softened
- 1/2 cup heavy cream
- 1 cup sugar
- 1/2 cup powdered sugar
- 4 ounces Instant Vanilla Jello pudding mix
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 1 box Lucky Charms cereal (for filling and decoration)
Decoration
- 1 can vanilla frosting, chilled
- Prepare the crust: Crush the graham crackers in a blender or food processor until fine crumbs form. In a bowl, combine the graham cracker crumbs with sugar and melted butter, stirring to coat evenly. Line a 7-inch springform pan with parchment paper and press the crumb mixture firmly and evenly into the bottom to form the crust. Place the pan in the freezer to set.
- Make the cheesecake batter: In a stand mixer bowl, add softened cream cheese, heavy cream, and Instant Vanilla Jello pudding mix. Blend on low speed until combined. Add sugar, powdered sugar, vanilla extract, and fresh lemon juice. Increase speed to high and mix until the batter is smooth and creamy, stopping to scrape sides as needed. Remove some Lucky Charms cereal and separate about 20-30 colorful marshmallows and a few flakes. Gently fold these into the cheesecake batter with a spoon.
- Assemble and chill: Remove crust from freezer and pour the cheesecake batter over it, smoothing the top evenly. Place the pan back in the freezer for at least 2 hours, preferably overnight, to allow the cheesecake to set firmly.
- Decorate the cheesecake: When ready to serve, remove the cheesecake from the freezer and carefully remove the springform pan. Fill a piping bag fitted with a large star tip with chilled vanilla frosting and pipe dollops around the edge of the cheesecake. Generously sprinkle Lucky Charms marshmallows and flakes over the top and on the frosting dollops for a colorful and playful presentation.
- Serve: Cut the cheesecake into 2-3 inch wide slices and enjoy this fun, creamy, and crunchy dessert.
Notes
- For best texture, ensure cream cheese is fully softened before mixing.
- Freezing the cheesecake helps it firm up since it is not baked.
- You can substitute vanilla frosting with homemade whipped cream if preferred.
- Store leftovers in the freezer to maintain firmness and freshness.
- Use fresh lemon juice to balance the sweetness and add a slight tang.
