Cookie Dough
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
Filling
- ½ cup lemon curd (store-bought or homemade)
- Prepare the dough: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Gradually add the all-purpose flour and mix until a soft dough forms.
- Shape the cookies: Roll the dough into small balls, about 1 inch in diameter, and place them evenly spaced on a baking sheet lined with parchment paper.
- Bake the cookies: Bake in a preheated oven at 350°F (175°C) for 12-15 minutes or until the edges are lightly golden.
- Fill with lemon curd: Remove the cookies from the oven and immediately press your thumb or the back of a spoon in the center of each cookie to create an indentation. Allow the cookies to cool completely on a wire rack.
- Add lemon curd center: Once cooled, spoon a small amount (about 1 teaspoon) of lemon curd into each indentation, filling the centers evenly. Let the lemon curd set before serving.
Notes
- Make sure the butter is softened but not melted for easier mixing.
- Use high-quality lemon curd for the best flavor impact.
- These cookies can be stored in an airtight container at room temperature for up to 3 days.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Chilling the dough for 30 minutes before baking can help with handling and results in a more uniform texture.
