Korean Strawberry Milk is a sweet and refreshing drink made by swirling a homemade strawberry syrup into cold whole milk. This beloved Korean café favorite balances the natural tartness of fresh strawberries with the creamy sweetness of milk, perfect for a delightful treat.

Ingredients

Scale

Strawberry Syrup

  • 1 lb fresh strawberries (16 oz. container), washed, stems removed, sliced and chopped
  • 1/3 cup sugar (raw turbinado, brown, or white granulated)

Beverage

  • 32 oz Hiland Dairy Whole Milk (or any whole milk)
  • Ice cubes (optional)

Instructions

  1. Prepare the Strawberries: Begin by thoroughly washing and drying the fresh strawberries. Remove the stems, slice them, and then roughly chop the slices into smaller pieces for even cooking.
  2. Cook the Strawberry Syrup: Place a skillet on the stovetop over medium heat. Add the chopped strawberries and sugar to the pan, stirring to combine. Cook the mixture until it thickens into a syrupy consistency with softened chunks of strawberries remaining, about 8-10 minutes.
  3. Cool and Chill: Remove the skillet from heat and transfer the strawberry syrup into a sealed storage container. Place it in the refrigerator to chill for at least two hours to deepen the flavors and cool completely.
  4. Assemble the Drink: When ready to serve, spoon the chilled strawberry syrup into a glass. Use the back of the spoon to swirl the syrup along the inside of the glass for a visually appealing effect. Add ice cubes if desired, then pour the whole milk over the syrup. Serve immediately and enjoy the creamy, fruity blend.

Notes

  • The strawberry syrup can be prepared up to 3 days in advance and stored in the refrigerator.
  • For a lower sugar version, reduce the amount of sugar or substitute with a natural sweetener like honey or agave syrup.
  • Use fresh, ripe strawberries for the best flavor and vibrant color.
  • Whole milk is recommended for creaminess, but you can substitute with plant-based milk for a vegan or dairy-free option.
  • Add ice cubes if you prefer a chilled, refreshing drink.
