Jalapeno Stuffing
- 2 Jalapenos, sliced lengthwise, seeds and membranes removed
- 4 ounces cream cheese
Sandwich Components
- 4 slices bacon, cooked until crispy
- 2 slices Monterey Jack cheese
- 2 slices sharp cheddar cheese
- 4 slices Italian bread
- Chopped cilantro (optional)

- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the stuffed jalapenos.
- Prepare Stuffed Jalapenos: Stuff each jalapeno half with about 1 ounce of cream cheese and place them on a baking sheet. Bake in the oven for 25 to 30 minutes until slightly softened and heated through, then remove from the oven.
- Assemble Sandwiches: Lay out the bread slices. Place one slice of sharp cheddar cheese on two slices of bread and one slice of Monterey Jack cheese on the other two slices. Slice the baked jalapenos into bite-size pieces and distribute evenly over the cheddar cheese slices. Add the 4 slices of crispy bacon over the Monterey Jack cheese slices. If you like, sprinkle chopped cilantro on one side of the bread. Then combine the bread slices with cheddar and jalapenos with those having Monterey Jack and bacon, forming two sandwiches.
- Toast Sandwiches: Add several pats of butter on top of each sandwich and place them butter side down onto a skillet heated over medium-low heat. Add more pats of butter on top of the sandwiches. Grill each side until the bread is lightly browned and crispy, and the cheese inside is melted and gooey. Remove from skillet and serve warm.

- Removing seeds and membranes from jalapenos reduces heat, but you can adjust based on your spice preference.
- Use a medium-low heat to grill the sandwiches to ensure the cheese melts without burning the bread.
