Ingredients

Scale

Chicken Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Jalapeno Peach Sauce Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 2 fresh jalapenos, seeded and finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a large bowl, combine 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika. Add the chicken breasts and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours to infuse flavors.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. When hot, add the marinated chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. Prepare the Jalapeno Peach Sauce: In the same skillet, add 1 tablespoon olive oil over medium heat. Sauté the finely chopped red onion and minced garlic for 2-3 minutes until soft and fragrant.
  4. Add Peaches and Jalapenos: Stir in the diced peaches, chopped jalapenos, honey, apple cider vinegar, soy sauce, and lime juice. Combine well and cook for 5-7 minutes until peaches soften and sauce thickens slightly. Season with salt and pepper to taste.
  5. Combine Chicken with Sauce: Nestle the cooked chicken breasts back into the skillet with the jalapeno peach sauce. Spoon sauce over chicken to coat well.
  6. Simmer Together: Reduce heat to low and simmer for 5-10 minutes to allow flavors to meld and chicken to absorb the sauce. Serve warm.

Notes

  • Removing jalapeno seeds reduces heat for a milder sauce; include seeds for more spice.
  • Use ripe, juicy peaches for the best flavor and natural sweetness.
  • Marinating chicken longer (up to 2 hours) enhances flavor and tenderness.
  • This dish pairs well with rice, quinoa, or a fresh green salad.
  • For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
