Instructions

  1. Prepare the Pie Dough: Remove the refrigerated pie crusts from their packaging and allow them to come to room temperature as per package instructions. Use a 3-inch cookie cutter to cut circles from the dough, placing them closely together to maximize yield.
  2. Make the S’mores Filling: In a medium bowl, combine the chopped chocolate, mini marshmallows, and half of the crushed graham crackers. Mix well to evenly distribute all ingredients. For extra gooeyness, add additional chocolate if desired.
  3. Fill and Seal the Mini Pies: Place about one tablespoon of the filling in the center of half of the dough circles. Moisten the edges with water, then place another dough circle on top. Press gently to seal and use a fork to crimp the edges for a decorative and secure finish.
  4. Butter and Top the Pies: Brush the tops of each sealed pie with melted salted butter. Evenly sprinkle the reserved crushed graham cracker crumbs on top of the buttered surfaces.
