Instructions

  1. Prepare baking dish: Line an 8×8 inch pan or casserole dish with parchment paper or foil, then lightly spray with non-stick cooking spray to prevent the fudge from sticking.
  2. Melt chocolate and butter: In a double boiler over medium heat, combine semi-sweet chocolate chips, milk chocolate chips, and unsalted butter. Stir constantly to prevent burning until melted. Alternatively, use a microwave-safe bowl and heat for 45 seconds, stirring, then continue microwaving in 15-second intervals with stirring until fully melted.
  3. Add condensed milk and hot chocolate mix: Stir in the sweetened condensed milk and hot chocolate powder until the mixture is smooth and well combined.
  4. Flavor and mix marshmallows: Remove from heat and stir in the vanilla extract. Gently fold in 2 cups of the mini marshmallows into the chocolate mixture.
  5. Pour and top: Transfer the fudge mixture into the prepared pan, smoothing the surface. Evenly spread the remaining 1 cup of mini marshmallows on top and gently press them into the fudge to adhere.
  6. Refrigerate: Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, or until the fudge is firm and set.
