Ingredients

Scale

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Vegetables

  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and black pepper until well combined.
  2. Marinate the chicken: Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Refrigerate for at least 30 minutes or up to 8 hours to enhance flavor.
  3. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting.
  4. Prepare sweet potatoes: Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Toss until evenly coated.
  5. Start roasting sweet potatoes: Place the baking sheet in the oven and roast for about 15 minutes until they begin to soften.
  6. Add chicken and green beans: Remove the sweet potatoes from the oven and push them to one side. Lay the marinated chicken breasts on the empty side and scatter the trimmed green beans around the chicken.
  7. Drizzle marinade: Pour any remaining marinade over the chicken and vegetables for extra flavor.
  8. Finish baking: Return the baking sheet to the oven and bake for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.

Notes

  • Marinating the chicken longer enhances the flavor, but even 30 minutes is sufficient for a tasty dish.
  • If you prefer crispier sweet potatoes, roast them separately.
  • Use a meat thermometer to ensure the chicken is fully cooked.
  • You can substitute green beans with asparagus or broccoli if preferred.
  • For a gluten-free version, use tamari instead of soy sauce.
