Ingredients

Scale

Herb Mixture

  • 1/4 teaspoon minced fresh garlic
  • 1/4 teaspoon minced fresh thyme leaves
  • 1/4 teaspoon minced fresh rosemary leaves
  • 1 tablespoon minced fresh basil (about 3 large leaves)
  • 2 tablespoons freshly grated Parmesan

Eggs and Dairy

  • 4 extra-large eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter

Seasoning

  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the Broiler: Set your oven broiler on and preheat it for 5 minutes. Position the oven rack about 6 inches below the heat source to prepare for baking your eggs.
  2. Prepare Herb Mixture: In a small bowl, combine the minced fresh garlic, thyme, rosemary, basil, and freshly grated Parmesan cheese. Set this mixture aside to be used later as a flavorful topping.
  3. Crack Eggs Carefully: Crack 2 eggs into each of two small bowls or teacups, taking care not to break the yolks. Having the eggs ready before cooking ensures a smooth broiling process.
  4. Heat Cream and Butter: Place two individual ramekins or gratin dishes on a baking sheet. Add 1 tablespoon of heavy cream and 1/2 tablespoon unsalted butter to each dish. Place the baking sheet under the broiler for about 3 minutes until the cream and butter are hot and bubbly.
  5. Combine and Season: Quickly but gently pour 3 eggs into each preheated ramekin. Evenly sprinkle the herbed Parmesan mixture over the eggs, then generously season with kosher salt and freshly ground black pepper.
  6. Broil the Eggs: Return the baking sheet to the broiler and cook the eggs for 5 to 6 minutes, or until the whites are almost set. Rotate the baking sheet once during cooking if you notice uneven browning to ensure consistent cooking.
  7. Rest and Serve: Remove the ramekins from the oven and let the eggs sit for about 60 seconds to finish cooking from residual heat. Serve immediately while hot with toasted bread and your preferred breakfast beverage such as orange juice, coffee, or tea.

Notes

  • Use extra-large eggs for optimal portion size and texture.
  • Do not break the yolks when cracking the eggs; this keeps them visually appealing and improves texture.
  • Keep an eye on the eggs while broiling to prevent overcooking as they continue to cook slightly after removal from the oven.
  • Feel free to substitute Parmesan with another hard cheese like Pecorino Romano if desired.
  • Serve immediately for best taste and texture; leftovers may become rubbery if reheated.
