Ingredients

Scale

Cookie Dough Base

  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips

Chocolate Layer

  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt, optional

Instructions

  1. Prepare the cookie dough base: In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Stir thoroughly until the mixture is uniformly combined. Then, fold in 1/4 cup chocolate chips to add texture and bursts of chocolate.
  2. Shape the dough: Line a cutting board or large plate with parchment paper. Transfer the cookie dough onto the parchment. Using a silicone spatula or your clean hands, press and flatten the dough evenly to about a 1/2-inch thickness. Set this aside for the next step.
  3. Melt the chocolate topping: In a small bowl, combine 1 cup chocolate chips with 1 teaspoon of coconut oil. Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  4. Assemble the bark: Pour the melted chocolate evenly over the flattened cookie dough layer. Sprinkle flaky sea salt on top, if desired, to enhance flavor with a subtle salty crunch.
  5. Set and serve: Place the assembled cookie dough bark into the freezer and chill for about 10 minutes, or until the chocolate is firm. Once set, cut or break into large chunks and enjoy immediately or store in an airtight container in the refrigerator.

Notes

  • For a nut-free version, substitute almond flour with oat flour and use sunflower seed butter instead of cashew butter.
  • You can use dark, milk, or vegan chocolate chips depending on your preference.
  • If you prefer a sweeter bark, increase maple syrup by 1-2 tablespoons.
  • Store leftovers in the refrigerator for up to one week or freeze for longer storage.
  • Flaky sea salt is optional but highly recommended to balance sweetness and enhance taste.
