Ingredients

Scale

Base Ingredients

  • 12 tablespoons olive oil (or ghee)
  • 1 onion, diced
  • 1 tablespoon fresh ginger, grated or finely minced
  • 45 garlic cloves, grated or finely minced
  • 12 teaspoons turmeric powder (or 23 teaspoons fresh turmeric, finely grated – or a little of both)
  • ¼ teaspoon mustard seed (optional)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ¾1 teaspoon salt
  • 4 cups water
  • 4 cups vegetable or chicken stock
  • ¼ teaspoon cayenne pepper, or more to taste
  • Squeeze of lime juice or lemon juice (to taste) or 1-2 teaspoons apple cider vinegar (to taste)

Instructions

  1. Sauté aromatics: In a large heavy bottom pot or Dutch oven, heat 1-2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until fragrant and golden brown.
  2. Add ginger, garlic, and turmeric: Stir in the grated fresh ginger, garlic cloves, and fresh turmeric. Continue to sauté for 2-3 minutes until the garlic is fragrant and golden.
  3. Toast spices: Add mustard seeds (if using), cumin, coriander, and turmeric powder. Sauté the mixture for another 1-2 minutes to fully bloom the spices and enhance their flavors.
  4. Simmer broth: Pour in 4 cups of water and 4 cups of vegetable or chicken stock. Add the salt and cayenne pepper. Bring the broth to a gentle simmer.
  5. Add acidity and adjust flavors: Stir in a squeeze of lime or lemon juice or 1-2 teaspoons of apple cider vinegar. Taste the broth and adjust salt, citrus, and spice levels according to your preference.
  6. Use as base or finish soup: This flavorful broth can be used immediately as a soup base. Add vegetables, uncooked pasta (remember pasta doubles or triples in size, so add about 4 ounces dry), beans, or your desired ingredients. Adjust cooking times accordingly to ensure all additions are properly cooked.
  7. Store leftovers: You can refrigerate or freeze this broth in batches for convenient, ready-to-use soup base later.

Notes

  • Fresh turmeric adds a vibrant color and flavor; if unavailable, turmeric powder works well.
  • Mustard seeds are optional but add a subtle pungency if included.
  • Adjust cayenne pepper according to your heat preference.
  • When adding pasta or beans, remember they expand significantly, so use moderate amounts.
  • Cooking times will vary depending on the ingredients you add to the broth base; be mindful not to overcook delicate vegetables.
  • This broth works well for both vegetarian and meat-based soups depending on the stock used.
