4.4 from 88 reviews

This classic Hasselback Potato recipe features thinly sliced potatoes baked to crispy perfection with melted butter, fresh herbs, and a cheesy topping. It’s an impressive yet easy side dish that combines a crispy exterior with a tender inside, enhanced by savory cheddar and parmesan cheeses.

Ingredients

Scale

Potatoes

  • 4 medium-sized potatoes

Seasoning

  • ½ teaspoon kosher salt (or to taste)
  • 23 Tablespoons butter (melted)
  • 23 Tablespoons chopped fresh herbs (parsley, thyme, sage, chives, or other herbs) or 2-3 teaspoons dried herbs

Cheese Topping

  • 4 Tablespoons cheddar cheese (shredded)
  • 2 Tablespoons parmesan cheese (shredded)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough to crisp the potatoes during baking.
  2. Prepare Potatoes: Wash and dry the potatoes thoroughly. If you prefer, or if the skin is tough, peel the potatoes to your liking.
  3. Slice Potatoes: Thinly slice each potato about ¾ of the way through, making sure not to cut all the way through so the potato stays intact. These slices should be evenly spaced to allow for even cooking and crisping.
  4. Season and Butter: Place the sliced potatoes in a baking dish and gently fan them open a little. Sprinkle kosher salt evenly over the potatoes, drizzle melted butter all over, and then scatter the chopped fresh or dried herbs on top.
  5. Bake Potatoes: Bake the potatoes in the preheated oven for 50 minutes. This allows the potatoes to cook through and the edges to become crispy.
  6. Add Cheese and Finish Baking: After 50 minutes, sprinkle cheddar and parmesan cheese evenly over the potatoes. Return the dish to the oven and bake for an additional 10-15 minutes until the cheese is melted, golden, and the potatoes are cooked through.
  7. Garnish and Serve: Remove from oven and garnish with additional fresh herbs if desired. Serve hot as a delicious side dish.

Notes

  • To help potatoes cut evenly, place chopsticks or wooden spoons on either side of the potato while slicing to avoid cutting all the way through.
  • You can customize the herbs according to your preference; rosemary and chives also pair well.
  • Using a mix of cheeses enhances flavor; feel free to try other melting cheeses like mozzarella or gruyere.
  • For extra crispiness, you can brush the potatoes with olive oil instead of butter.
  • Ensure the potatoes are medium-sized for even cooking; very large potatoes may need additional baking time.
  • Leftover Hasselback potatoes can be reheated in an oven or toaster oven to maintain crisp texture.
