Ingredients

Scale

Brownie Batter

  • 2/3 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 large eggs, cold
  • 1 tsp pure vanilla extract
  • 2/3 cup unsweetened cocoa powder, sifted
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1/2 tsp salt
  • 15 Oreo cookies, coarsely crushed

Frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1/2 tsp pure vanilla extract
  • 34 tbsp milk or heavy cream
  • Green gel food coloring
  • Pinch of salt

Decoration

  • 5 Halloween-themed Oreo cookies
  • Edible candy eyes
  • Assorted Halloween sprinkles (optional)
  • Melting chocolate (white or dark, optional)

Instructions

  1. Prepare Pan & Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal after baking, and lightly grease the parchment to prevent sticking.
  2. Combine Wet Ingredients: Melt 2/3 cup of unsalted butter and let it cool slightly. In a large mixing bowl, whisk together melted butter, 1 cup granulated sugar, and 1/3 cup brown sugar until smooth. Then, beat in the 2 cold eggs one at a time to ensure proper emulsification, followed by 1 teaspoon of pure vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, thoroughly whisk together the sifted unsweetened cocoa powder, all-purpose flour, and salt to evenly distribute and avoid lumps.
  4. Combine & Add Oreos: Gradually add the dry ingredients into the wet mixture, folding gently until just combined to avoid overmixing which could make brownies tough. Fold in the 15 coarsely crushed Oreo cookies, making sure they are evenly dispersed throughout the batter.
  5. Bake Brownies: Pour the prepared batter into the lined baking pan and spread evenly. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out with moist crumbs but not wet batter. Avoid overbaking to keep the brownies fudgy. Once done, cool completely on a wire rack for 1 to 2 hours.
  6. Prepare Green Frosting: Beat 1 cup of softened unsalted butter until light and fluffy using a mixer. Gradually add 4 cups of sifted powdered sugar, along with 1/2 teaspoon vanilla extract, a pinch of salt, and 3 to 4 tablespoons of milk or heavy cream, beating continuously until smooth and spreadable. Stir in green gel food coloring until you achieve a spooky, vibrant green hue.
  7. Assemble & Decorate: After the brownies have cooled completely, spread the green buttercream frosting evenly over the top. Arrange the remaining 5 Halloween-themed Oreo cookies decoratively across the surface. Add edible candy eyes and, if desired, sprinkle on assorted Halloween sprinkles or drizzle with melted white or dark chocolate to mimic spiderwebs or add extra flair.
  8. Chill, Slice & Serve: Place the decorated brownies in the refrigerator to chill for at least 30 minutes to firm up the frosting and help with clean slicing. Using a hot, clean knife, slice the brownies into desired portions and serve. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to one week.

Notes

  • For best results, use room temperature ingredients where called for, except eggs which are used cold here as per recipe.
  • Do not overmix the batter after adding dry ingredients to maintain fudgy texture.
  • Chilling the brownies after decorating helps achieve clean slices without smudging the frosting.
  • If you don’t have green gel food coloring, use any gel coloring but green is recommended for the Halloween theme.
  • Store brownies properly in an airtight container to maintain freshness.
  • Optional decorations like melted chocolate and sprinkles add visual appeal but can be omitted.
