Ingredients

Scale

Teriyaki Sauce

  • ¼ cup soy sauce
  • 3 tablespoons brown sugar
  • ¾ cup water
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated or minced
  • 2 tablespoons cornstarch
  • ¼ cup water (for slurry)
  • 1 tablespoon orange zest

Stir Fry

  • 1 lb ground turkey
  • 2 teaspoons sesame oil
  • 3 cups broccoli florets (fresh or frozen)
  • 1 small onion, small diced
  • 1 cup shredded carrots
  • Salt and pepper to taste

Instructions

  1. Prepare Teriyaki Sauce: In a small saucepan over medium heat, combine ¾ cup water, soy sauce, minced garlic, grated ginger, honey, and brown sugar. Stir the mixture well.
  2. Thicken Sauce: Bring the sauce to a low boil. In a separate small bowl, whisk together the remaining ¼ cup water and cornstarch until the cornstarch is completely dissolved. Slowly stir this slurry into the boiling sauce. Allow it to thicken, then immediately remove from heat and stir in the orange zest. Set aside.
  3. Sauté Aromatics and Turkey: Heat sesame oil in a wok or large skillet over medium-high heat. Add the diced onions and cook for several minutes until softened. Add the ground turkey, cooking thoroughly until it reaches an internal temperature of 165°F, about 7-10 minutes.
  4. Add Vegetables: Stir in the broccoli florets and shredded carrots. Cook until vegetables are heated through and tender-crisp.
  5. Combine with Sauce and Simmer: Reduce heat to low and pour the prepared teriyaki sauce over the turkey and vegetables. Stir to combine and simmer for several minutes to allow flavors to meld.
  6. Serve: Serve the stir fry hot over steamed rice or your preferred accompaniment.

Notes

  • Use fresh broccoli for the best texture, but frozen florets work well too.
  • Adjust sweetness and saltiness of the sauce by varying the amount of honey and soy sauce.
  • Ensure ground turkey is fully cooked to an internal temperature of 165°F for safety.
  • For a gluten-free option, use gluten-free soy sauce or tamari.
  • Add crushed red pepper flakes for a spicy kick.
