Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Vegetables

  • 2 cups broccoli florets
  • 3 cloves garlic, minced

Grains

  • 1 cup cooked grains (rice, quinoa, couscous, etc.)

Dairy & Fats

  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Seasonings

  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Grill the Chicken: Season the chicken breasts with olive oil, salt, black pepper, and any optional spices. Preheat a grill or grill pan over medium-high heat. Place the chicken on the grill and cook, flipping once, until the chicken is cooked through with an internal temperature of 165°F and has a nice charred exterior. Remove from heat and let rest.
  2. Roast the Broccoli: Preheat your oven to 400°F (200°C). Toss broccoli florets with olive oil, lemon juice, and a pinch of salt. Spread the broccoli evenly on a baking sheet and roast for 15 to 20 minutes or until the florets are crisp-tender and lightly browned.
  3. Cook the Grains: Prepare your choice of grains (rice, quinoa, couscous, etc.) according to the package instructions. Once cooked, fluff the grains with a fork and keep them warm until assembly.
  4. Make the Creamy Garlic Sauce: In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 to 2 minutes, taking care not to burn the garlic. Stir in the heavy cream, and season with salt and black pepper. Simmer the sauce gently until it thickens slightly, around 3 to 5 minutes.
  5. Assemble the Bowls: In serving bowls, layer cooked grains as the base, followed by sliced grilled chicken breasts and roasted broccoli florets. Drizzle the creamy garlic sauce generously over the top. Garnish with fresh parsley or chives if desired, and serve immediately.

Notes

  • You can substitute the grains with cauliflower rice to make the dish lower-carb.
  • Adjust the garlic in the sauce according to your preference for a milder or more intense flavor.
  • Use a meat thermometer to ensure the chicken is perfectly cooked and safe to eat.
  • Leftover components can be stored separately in the refrigerator for up to 3 days.
  • For a dairy-free version, substitute heavy cream with coconut cream and butter with olive oil or a non-dairy butter alternative.
