This Gingerbread Banana Bread is a warm, spiced twist on traditional banana bread, infused with aromatic gingerbread spices and sweet molasses. Perfect for the holiday season, it’s moist and flavorful with a sweet cinnamon sugar crust and a creamy powdered sugar glaze topped with festive sprinkles.

Ingredients

Scale

For the Bread

  • 1 Tablespoon cinnamon sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mashed bananas (23 medium)
  • 1/4 cup sour cream
  • 1/4 cup molasses
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground allspice

For the Glaze

  • 1 cup powdered sugar
  • 5 teaspoons milk
  • Holiday sprinkles (optional)

Instructions

  1. Prepare the pan: Preheat oven to 350 degrees F. Spray a 9×5 loaf pan with nonstick baking spray and sprinkle it with the cinnamon sugar. Tap to coat the entire pan evenly to create a sweet crust.
  2. Mix wet ingredients: Beat the softened butter and dark brown sugar together until creamy and smooth. Add vanilla extract, eggs, mashed bananas, sour cream, and molasses; beat again until all ingredients are well combined.
  3. Combine dry ingredients: In a separate bowl, stir together the all-purpose flour, baking soda, salt, cinnamon, ground ginger, nutmeg, and ground allspice until evenly mixed. Gradually add to the wet mixture, stirring until just combined to avoid overmixing.
  4. Bake the bread: Spoon the batter into the prepared loaf pan, smoothing the top. Bake for 65-70 minutes or until a long skewer or toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  5. Cool down: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, carefully flip the bread out onto a wire rack or plate to cool completely.
  6. Prepare the glaze and finish: Stir together powdered sugar and milk until smooth. Pour and spread the glaze evenly over the top of the cooled bread. Decorate with holiday sprinkles if desired to add a festive touch.

Notes

  • Ensure bananas are ripe for the best flavor and sweetness.
  • Do not overmix once adding flour to keep the bread tender.
  • The glaze can be adjusted for thickness by adding more powdered sugar or milk.
  • This bread keeps well stored tightly wrapped at room temperature for 3 days or refrigerated for up to a week.
  • Freeze leftover bread slices for up to 3 months; thaw before serving.
