These crispy and flavorful Fish Finger Sandwiches are a quick and delicious meal featuring air-fried fish sticks layered with fresh lettuce, tangy dill pickles, and creamy homemade tartar sauce, all sandwiched between buttery white bread.

Ingredients

Scale

For the Sandwiches

  • 6 fish sticks
  • 4 slices white sandwich bread
  • 2 tablespoons softened butter
  • ½ cup chopped lettuce
  • 6 slices dill pickles (more to taste)

For the Tartar Sauce

  • ½ cup mayonnaise
  • ¼ cup minced dill pickles
  • 1 teaspoon fresh minced dill
  • 1 teaspoon lemon juice
  • ½ teaspoon onion powder

Instructions

  1. Prepare the Air Fryer: Spray the air fryer basket with oil spray to prevent sticking.
  2. Arrange Fish Sticks: Place the fish sticks in a single layer in the air fryer basket, leaving some space between each for proper air circulation. Lightly spritz the fish sticks with oil spray for extra crispiness.
  3. Air Fry the Fish Sticks: Cook at 400°F (204°C) for 12 minutes or until the fish sticks are hot and crispy, turning or rotating if necessary for even cooking.
  4. Butter the Bread: While the fish sticks cook, spread softened butter evenly on one side of each slice of white sandwich bread.
  5. Assemble the Sandwiches: On two slices of the buttered bread (buttered side up), layer chopped lettuce, 3 cooked fish sticks each, and six slices of dill pickles. Drizzle tartar sauce generously over the top.
  6. Complete the Sandwich: Top with the remaining two slices of bread, buttered side down, to complete each sandwich.
  7. Make the Tartar Sauce: In a small bowl, combine mayonnaise, minced dill pickles, fresh minced dill, lemon juice, and onion powder. Stir well until fully combined.
  8. Serve: Serve the fish finger sandwiches immediately while the fish sticks are still hot and crispy.
  9. Storage: Store any leftover tartar sauce in an airtight container in the refrigerator for up to 5 days.

Notes

  • You can use frozen fish sticks of your choice but ensure they are cooked thoroughly.
  • Adjust the amount of tartar sauce and pickles based on your taste preference.
  • For a healthier alternative, use whole wheat bread or low-fat mayo in the tartar sauce.
  • To crisp fish sticks further, spritz with a little more oil before air frying.
