For the Sandwiches
- 6 fish sticks
- 4 slices white sandwich bread
- 2 tablespoons softened butter
- ½ cup chopped lettuce
- 6 slices dill pickles (more to taste)
For the Tartar Sauce
- ½ cup mayonnaise
- ¼ cup minced dill pickles
- 1 teaspoon fresh minced dill
- 1 teaspoon lemon juice
- ½ teaspoon onion powder
- Prepare the Air Fryer: Spray the air fryer basket with oil spray to prevent sticking.
- Arrange Fish Sticks: Place the fish sticks in a single layer in the air fryer basket, leaving some space between each for proper air circulation. Lightly spritz the fish sticks with oil spray for extra crispiness.
- Air Fry the Fish Sticks: Cook at 400°F (204°C) for 12 minutes or until the fish sticks are hot and crispy, turning or rotating if necessary for even cooking.
- Butter the Bread: While the fish sticks cook, spread softened butter evenly on one side of each slice of white sandwich bread.
- Assemble the Sandwiches: On two slices of the buttered bread (buttered side up), layer chopped lettuce, 3 cooked fish sticks each, and six slices of dill pickles. Drizzle tartar sauce generously over the top.
- Complete the Sandwich: Top with the remaining two slices of bread, buttered side down, to complete each sandwich.
- Make the Tartar Sauce: In a small bowl, combine mayonnaise, minced dill pickles, fresh minced dill, lemon juice, and onion powder. Stir well until fully combined.
- Serve: Serve the fish finger sandwiches immediately while the fish sticks are still hot and crispy.
- Storage: Store any leftover tartar sauce in an airtight container in the refrigerator for up to 5 days.
Notes
- You can use frozen fish sticks of your choice but ensure they are cooked thoroughly.
- Adjust the amount of tartar sauce and pickles based on your taste preference.
- For a healthier alternative, use whole wheat bread or low-fat mayo in the tartar sauce.
- To crisp fish sticks further, spritz with a little more oil before air frying.
