Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While waiting, chop all the vegetables as directed and grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: Heat the avocado oil in a Dutch oven or large saucepan until hot. Add the chopped onion, green bell pepper, and cubed sweet potatoes. Cook for 8-9 minutes, stirring occasionally, until vegetables start to soften. In the last 1-2 minutes, add minced garlic and sauté briefly. Remove the vegetables and spread them evenly in the prepared casserole dish.
  3. Cook the Sausage: In the same pan, add the turkey sausage and sauté until fully cooked, breaking it into small pieces as it cooks. Once done, combine the cooked sausage with the vegetables in the casserole dish, mixing well.
  4. Prepare the Egg Mixture: In a separate bowl, whisk together the eggs, milk, dried thyme, salt, pepper, and grated mozzarella until smooth and well combined.
  5. Combine and Bake: Pour the egg mixture evenly over the sausage and vegetable mix in the casserole dish. Stir gently to distribute the egg mixture. Bake in the preheated oven for 40-45 minutes, or until the center is set and firm. If the top browns too quickly, cover loosely with foil halfway through baking.
  6. Cool and Serve: Remove the casserole from the oven and allow it to cool for about 15 minutes before slicing and serving. This cooling time helps flavors meld and makes serving easier.
