  • 1 or 2 slices Sourdough or bread of your choice

Instructions

  1. Boil the Egg: Add 1 inch of water to a pot, cover it, and bring to a boil over high heat. Once boiling, carefully add the egg(s) to the pot. Close the lid and let the egg boil for exactly six minutes to achieve soft-boiled consistency. After six minutes, remove the egg and immediately run it under cool water until it is cool enough to handle. Peel the shell off gently and set aside.
  2. Prepare the Avocado: While the egg is boiling and cooling, peel and destone the avocado. Use a fork to mash the avocado until creamy but still slightly chunky. Squeeze in the juice of the small lime, then add flaky salt, coarse black pepper, and a pinch of red chili flakes. Mix thoroughly to combine all flavors.
  3. Toast the Bread: Toast the sourdough or bread slices to your preferred level of crispiness using a toaster or grill.
  4. Assemble the Toast: Remove the toasted bread and spread the mashed avocado evenly over the slices. Place the peeled soft boiled egg on top of the avocado spread. Optionally, add extra seasoning like salt, pepper, or chili flakes to taste before serving.
