Dip Mixture
- ½ cup mayonnaise (full fat and organic)
- 4 ounces cream cheese (full fat)
- 2 tablespoons stone ground mustard
- 1 tablespoon white wine vinegar

- Peel the eggs: If you have leftover boiled eggs, peel them carefully and separate the egg whites from the yolks to start making the dip.
- Boil the eggs: For fresh eggs, place them in a saucepan covered with water. Bring to a boil and cook for 2-3 minutes, then remove from heat and let them sit in hot water for 10-12 minutes. Alternatively, boil the eggs for 7 minutes then cool under cold water.
- Cool and peel: After boiling, plunge eggs into ice water to cool quickly before peeling. Peel carefully and separate the yolks from whites.
- Prepare the eggs: Add the egg yolks to a food processor. Divide the egg whites, adding half to the food processor and finely chopping the other half to keep separate.
- Make the creamy mixture: Add mayonnaise, stone ground mustard, white wine vinegar, cream cheese, and red hot sauce (if using) to the food processor. Process until smooth and creamy.
- Combine ingredients: Transfer the creamy yolk mixture to the bowl with chopped egg whites. Season with salt and pepper, add chopped chives, and gently stir to combine all ingredients evenly.
