Instructions

  1. Prepare the vegetables: Thinly slice the English cucumbers and red onion using a sharp knife or mandoline to ensure even and very thin slices for the best texture and flavor absorption.
  2. Mix the dressing and veggies: In a large bowl, toss together the sliced cucumbers, red onion, white wine vinegar, honey or agave nectar, and sea salt until everything is well combined and the vegetables begin to soften slightly.
  3. Chill the salad: Cover the bowl and chill the mixture in the refrigerator for 20 minutes to allow the flavors to meld and the cucumbers to marinate for a refreshing taste.
  4. Drain and garnish: Transfer the cucumber and onion mixture into a serving bowl, leaving any excess liquid behind to avoid sogginess. Sprinkle the chopped fresh dill and optional chives on top, then season with freshly ground black pepper according to taste.
