A delicious and easy Crockpot Hawaiian Chicken recipe featuring tender chicken breasts cooked in a sweet and tangy pineapple BBQ sauce. Perfect for a quick and flavorful weeknight dinner with minimal prep and fuss.

Ingredients

Scale

Sauce Ingredients

  • 20 oz can crushed pineapple
  • ⅓ cup BBQ sauce
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce

Chicken

  • lbs boneless skinless chicken breasts, cubed (1-inch pieces)

Thickening Agent (Optional)

  • 2 tbsp cornstarch
  • 2 tbsp cold water

Garnish

  • 1 green onion, sliced

Instructions

  1. Make the Sauce: In a medium bowl, combine the crushed pineapple, BBQ sauce, brown sugar, and soy sauce until well mixed. Pour this sauce mixture into the bottom of your crockpot to create a flavorful base.
  2. Add the Chicken: Place the cubed boneless skinless chicken breasts evenly over the sauce mixture in the crockpot. Ensure the chicken is fully coated by the sauce as it cooks.
  3. Cook: Cover the crockpot with the lid and cook on high heat for 2 to 3 hours, or until the chicken is fully cooked, tender, and easy to shred with a fork.
  4. Optional – Thicken the Sauce: About 30 minutes before the cooking time is complete, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water until smooth. Stir this slurry into the crockpot to thicken the sauce, then replace the lid and continue cooking.
  5. Garnish & Serve: Once cooked, remove the chicken from the heat and garnish with sliced green onions for added color and flavor. Serve hot, ideally over rice or with steamed vegetables.

Notes

  • You can substitute chicken thighs for breasts if you prefer darker meat with more flavor.
  • For a gluten-free option, use gluten-free soy sauce and BBQ sauce.
  • If you like a spicier dish, add a pinch of red pepper flakes to the sauce.
  • Make sure to cube the chicken pieces evenly for uniform cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove or microwave.
