Ingredients

Scale

Meat

  • 1 lb. ground beef (browned and drained)

Vegetables

  • 2 russet potatoes (diced)
  • 2 carrots (peeled and diced)
  • 3 celery ribs (peeled and diced)
  • 1 white onion (diced)

Seasonings

  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp dried basil
  • 1/2 tsp. garlic powder

Liquids & Cheese

  • 3 cups chicken broth
  • 1 lb. Velveeta cheese (add towards the end of cooking)
  • 8 oz. cream cheese (add towards the end of cooking)

Instructions

  1. Prepare for Slow Cooking: Brown the ground beef in a skillet, drain excess fat, and set aside. Dice the potatoes, carrots, celery, and onion. This prep ensures all ingredients are ready for the slow cooker.
  2. Combine Ingredients: In the slow cooker, add the browned beef, diced potatoes, carrots, celery, onion, salt, pepper, dried basil, garlic powder, and chicken broth. Do not add the Velveeta and cream cheese yet.
  3. Slow Cook the Soup: Cover the slow cooker with the lid and cook on LOW for 7 hours without opening, ensuring even cooking and tender vegetables. Alternatively, cook on HIGH for 3 to 4 hours until potatoes are tender.
  4. Add Cheeses: Cut Velveeta and cream cheese into cubes and add them to the soup in the slow cooker. Stir gently to distribute the cheese cubes, which won’t melt immediately.
  5. Finish Cooking: Cover and cook for an additional 1 hour on LOW to allow the cheese to fully melt and blend into the soup for a creamy texture.
  6. Stir and Serve: Once cooking is complete, stir the soup until the cheeses are fully incorporated, then serve hot and enjoy your comforting crockpot cheeseburger soup.

Notes

  • For a thicker soup, you can mash some of the potatoes during the final stirring.
  • Feel free to substitute Velveeta and cream cheese with other melting cheeses if desired.
  • This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
  • Adding a splash of milk or cream during the last hour can enhance creaminess if preferred.
  • Do not open the slow cooker lid frequently during cooking to maintain temperature and cooking time accuracy.
