Ingredients

Scale

Garlic and Aromatics

  • 45 cloves garlic, minced or roasted

Fat and Dairy

  • 2 tbsp butter or olive oil
  • ¾ cup heavy cream, milk, or plant-based milk
  • ¼ cup grated Parmesan or Pecorino cheese (optional)

Seasonings

  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • Pinch of nutmeg (optional)
  • Fresh or dried herbs (thyme, basil, oregano – optional)

Optional Vegan Variations

  • Almond, oat, or cashew milk in place of dairy milk and cream
  • Omit cheese or use vegan Parmesan

Extra Cheese Option

  • Mozzarella, fontina, or additional Parmesan cheese to taste

Instructions

  1. Prepare garlic and aromatics: Roast or sauté the minced garlic until fragrant. Optionally, you can also sauté onions or shallots to add more depth to the sauce.
  2. Melt butter or heat oil: In a saucepan over medium-low heat, melt 2 tablespoons of butter or warm olive oil gently to avoid burning.
  3. Add garlic: Add the prepared garlic to the melted butter or oil and cook for 1–2 minutes until the garlic becomes aromatic. Be careful not to let it brown, which can cause bitterness.
  4. Add cream or milk: Slowly pour in ¾ cup of heavy cream, milk, or plant-based milk while whisking continuously to combine the ingredients smoothly.
  5. Incorporate cheese (optional): Gradually add ¼ cup grated Parmesan or Pecorino cheese to the mixture. Stir well to allow the cheese to melt and thicken the sauce, enriching its flavor.
  6. Season: Add ½ teaspoon salt, ¼ teaspoon black pepper, a pinch of nutmeg, and any fresh or dried herbs like thyme, basil, or oregano. Taste the sauce and adjust the seasoning as needed.
  7. Blend (optional): For an ultra-smooth consistency, use an immersion blender to blend the sauce directly in the saucepan.
  8. Adjust consistency: If the sauce is too thick, thin it with extra milk or broth to make it pourable. Alternatively, simmer it gently to thicken if you want a denser sauce for a pizza base.
  9. Use immediately or store: Spread the sauce on your pizza, drizzle over pasta dishes, or store it in the refrigerator or freezer for future use.

Notes

  • You can use roasted garlic to add a sweeter, milder flavor to the sauce instead of raw minced garlic.
  • For a vegan version, substitute dairy milk and cheese with plant-based alternatives like almond milk and vegan Parmesan.
  • Adding extra cheeses like mozzarella or fontina can make the sauce richer and more indulgent.
  • If you prefer a thinner sauce, gradually add more milk or broth until the desired consistency is reached.
  • This sauce pairs well with white or thin-crust pizzas and can also be used as a creamy pasta sauce or dipping sauce.
