  • 8 large eggs
  • 1 cup cottage cheese (0% – 2% fat content works best)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup mix-ins of choice (chopped spinach, diced peppers, broccoli florets, cooked sausage, ham, etc.)

Instructions

  1. Prepare the oven and muffin tray: Preheat your oven to 350°F (175°C) and lightly grease a silicone muffin tray. Using non-stick cooking spray or a small amount of oil will help the egg bites release easily after baking.
  2. Blend eggs and cottage cheese: In a high-powered blender, combine the eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder. Blend until the mixture is smooth and homogenous.
  3. Pour mixture into muffin tray: Divide the blended egg mixture evenly into the prepared muffin tray, pouring about 1/4 cup of the mixture into each cavity.
  4. Add cheese and mix-ins: Top each egg cup with shredded cheese and your chosen mix-ins. Gently stir the toppings into the egg mixture using the back of a spoon for an even distribution. Optionally, sprinkle a little extra cheese on top.
  5. Bake the egg bites: Place the muffin tray in the oven and bake for 18-22 minutes, or until the egg bites are set (no longer jiggly). Allow them to cool for a few minutes before carefully removing from the tray.
