  • 2 egg whites (2 ounces or 6 tablespoons)
  • ⅔ cup water

Instructions

  1. Preheat the oven: Set your oven to 390°F (200°C) and allow it to fully preheat while preparing the batter.
  2. Blend the batter: Combine the oats, egg whites, water, vanilla protein powder, stevia, and baking powder in a blender. Blend until the mixture is smooth with a consistency similar to thick pancake batter.
  3. Pour first layer: Grease a small nonstick pan approximately 4.5 inches across. Pour half of the batter into the pan evenly.
  4. Add cinnamon layer: Sprinkle the tablespoon of cinnamon evenly over the batter in the pan.
  5. Top with remaining batter: Pour the remaining batter gently on top of the cinnamon layer.
  6. Create the swirl: Use a knife to gently pull through the batter a few times to create a slight swirl effect mixing the cinnamon with the batter.
  7. Bake the cake: Place the pan in the oven and bake for 12 minutes until the cake is set and lightly golden on top.
  8. Cool and serve: Remove the cake and let it rest for a few minutes before slicing and serving to allow flavors to settle.
