Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Ingredients

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

For Grilling

  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the chicken: Season both sides of the boneless skinless chicken breasts with salt and pepper evenly to enhance flavor.
  2. Cook the chicken: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, until fully cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes.
  3. Prepare sandwich components: Thinly slice the rested chicken breasts. Slice the avocado and set aside the cheese slices.
  4. Prepare the bread: Spread a thin layer of mayonnaise and Dijon mustard evenly on each slice of bread for added flavor and moisture.
  5. Assemble the sandwich: On two bread slices, layer the sliced chicken, avocado slices, and cheese. Add a few slices of thin red onion and fresh tomato on top for crunch and freshness.
  6. Top sandwiches: Cover each layered slice with the remaining bread, mayo side down, creating two sandwiches.
  7. Grill the sandwiches: Heat a skillet or grill pan over medium heat and add a little butter or olive oil to prevent sticking. Place sandwiches on the skillet and cook about 3-4 minutes per side, until the bread is golden brown and cheese is melted, pressing gently with a spatula to ensure even melting.
  8. Serve warm: Remove the sandwiches from the pan and allow them to cool for a minute. Slice each sandwich in half and serve warm for the best taste.

Notes

  • For extra crunch, add lettuce or crispy bacon strips.
  • You can substitute mayonnaise with Greek yogurt for a lighter option.
  • Choose cheese varieties that melt well, like Swiss, provolone, or cheddar.
  • Use ripe avocado for creaminess but avoid overly mushy ones.
  • Leftover chicken can be used; just reheat lightly.
  • For a gluten-free version, use gluten-free bread.
  • Adjust salt and pepper to taste based on your preference.
