Instructions

  1. Brown the Sausage: Heat vegetable oil in a large pot over medium heat. Add andouille sausage slices and cook, stirring occasionally, until browned, about 3-4 minutes. Remove the sausage from the pot and set aside on a plate.
  2. Sauté the Vegetables: In the same pot, add diced onion, celery, and red bell pepper. Cook over medium heat, stirring occasionally, until the vegetables are softened, about 5-8 minutes. Add the minced garlic and cook for an additional 1 minute to release the aroma.
  3. Add Seasonings and Broth: Stir in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Then add the chicken broth and cubed potatoes to the pot. Reduce the heat to low and let the soup simmer gently for 20-25 minutes, or until the potatoes are fork-tender.
  4. Combine and Finish: Return the browned sausage to the pot. Stir in the heavy whipping cream and shredded mild cheddar cheese. Continue simmering the soup for another 5 minutes, allowing the cheese to melt and everything to heat through thoroughly.
