Pretzels
- 16 ounces mini pretzel twists
Toffee Mixture
- 1 cup light brown sugar, packed
- ½ cup salted butter, sliced into pats (1 stick)
- 5 tablespoons light corn syrup
- 1 teaspoon pure vanilla extract
- ½ teaspoon baking soda
Toppings
- 8 ounces Heath English toffee bits, divided
- Preheat Oven and Prepare Pan: Preheat your oven to 200°F. Line a baking sheet with heavy-duty aluminum foil and generously spray it with nonstick cooking spray to prevent sticking.
- Prepare Pretzels: Place the 16 ounces of mini pretzel twists into an extra-large heat-safe bowl and set aside to be coated later.
- Make Toffee Mixture: In a 3 to 4 quart saucepan over medium heat, combine the packed light brown sugar, sliced salted butter pats, and light corn syrup. Stir constantly as you bring the mixture to a low boil. Continue boiling while stirring for 5 minutes to develop a rich toffee base.
- Add Flavor and Leavening: Remove the saucepan from heat and carefully stir in the pure vanilla extract and baking soda. Be cautious as the mixture will bubble up and thicken quickly due to the reaction with baking soda.
- Coat Pretzels: Immediately pour the hot toffee mixture over the pretzels in the heat-safe bowl. Use a wooden spoon or silicone spatula to gently stir and coat all the pretzels evenly with the sticky toffee.
- Spread Pretzels on Pan: Transfer and spread the coated pretzels evenly across the prepared baking sheet to create a single layer for baking.
- Add Toffee Bits: Sprinkle half of the 8 ounces of Heath English toffee bits over the top of the coated pretzels evenly.
- Bake: Bake the pretzels in the preheated oven for 1 hour, stirring and turning the mixture every 15 minutes to ensure even coating and prevent burning.
- Finish with Toffee Bits: Immediately after removing the pretzels from the oven, sprinkle the remaining half of the Heath toffee bits over the hot pretzels to allow them to melt slightly and add extra crunch.
- Cool and Serve: Allow the toffee pretzels to cool completely on the baking sheet before breaking them apart into clusters. Once cooled, they are ready to enjoy or package as gifts.
Notes
- Use heavy-duty aluminum foil to prevent the sticky toffee from tearing through during baking.
- Be very careful when stirring in the vanilla and baking soda as the mixture will bubble vigorously.
- Turning the pretzels every 15 minutes while baking ensures an even toffee coating and prevents burning.
- Cool completely before breaking apart to ensure the toffee hardens properly.
- Store in an airtight container to keep the pretzels crunchy for up to a week.
