Pizza Dough
- 1 Whole Wheat Pizza Dough
Buffalo Chicken Topping
- 1 cup Buffalo sauce (Frank’s recommended)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 8 ounces chicken breast, cooked and shredded
Cheese and Vegetables
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup crumbled blue cheese (2 ounces; gorgonzola or feta for milder flavor)
- 1/2 small red onion, thinly sliced
- 2 green onions, thinly sliced
- Preheat Oven and Prepare Pan. Place oven rack in the upper third of the oven and preheat to 425°F (220°C). Line a large baking sheet with parchment paper or dust with cornmeal or flour to prevent sticking.
- Mix Buffalo Sauce. In a large bowl, whisk together Buffalo sauce, garlic powder, and chili powder until well combined to create a flavorful spicy sauce base.
- Toss Chicken in Sauce. Add shredded chicken breast to the sauce mixture and toss thoroughly so all chicken pieces are evenly coated with the buffalo sauce mixture.
- Roll Out Dough. On a lightly floured work surface, roll out the whole wheat pizza dough into an 11×14-inch rectangle, ensuring even thickness throughout.
- Assemble Pizza. Gently transfer the rolled dough onto the prepared baking sheet. Spread the buffalo chicken mixture evenly over the dough, leaving a 3/4 inch border all around for the crust.
- Add Cheese and Onions. Sprinkle shredded mozzarella cheese evenly over the chicken, then add crumbled blue cheese and thinly sliced red onion on top.
- Bake. Bake the pizza in the preheated oven for 15-18 minutes, or until the crust turns crisp and golden brown and the cheese is melted and bubbly.
- Garnish and Serve. Remove from oven, sprinkle the thinly sliced green onions over the top, slice into pieces, and serve warm.
Notes
- Use cooked shredded chicken breast for best results.
- For milder blue cheese flavor, substitute gorgonzola with feta cheese.
- If you prefer a spicier pizza, add extra chili powder or more Buffalo sauce to the chicken mixture.
- Whole wheat dough adds nuttiness and extra fiber, but regular pizza dough can be used as alternative.
- To avoid soggy crust, make sure the chicken is well-drained before tossing in sauce.
