Bread Batter
- 2 overripe mashed bananas
- 1 cup plain and unsweetened almond or oat milk
- 1/4 cup melted vegan butter
- 3/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 1/2 cup regular or gluten-free all purpose flour
- 1 cup almond flour (or an additional 1/2 cup regular or gluten-free all purpose flour)
- 1 cup fresh blueberries (if not in season, frozen blueberries can be used)
Vegan Cream Cheese Frosting (optional)
- 2 oz vegan cream cheese
- 2 tbsp melted vegan butter
- 3/4 cup powdered sugar
- Preheat the oven: Begin by preheating your oven to 375°F (190°C). Grease a bread loaf pan with non-stick baking spray or line it with parchment paper to prevent sticking.
- Make the batter: In a large bowl, mash the overripe bananas thoroughly using a fork. Add the almond or oat milk, melted vegan butter, maple syrup, baking powder, baking soda, and vanilla extract. Whisk or stir well until all the wet ingredients are combined. Gradually add the regular all-purpose flour and almond flour, mixing until a thick batter forms. Finally, gently fold in the fresh or frozen blueberries to distribute them evenly.
- Bake the bread: Pour the prepared batter evenly into the greased loaf pan. Place in the preheated oven and bake for about 50 minutes, or until the loaf has risen fully and the top turns golden brown. Test for doneness by inserting a toothpick into the center; it should come out clean or with just a few moist crumbs. If the top is browning too quickly but the center isn’t cooked, cover the loaf loosely with aluminum foil and continue baking until done.
- Cool and frost (optional): Remove the loaf from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack. While the bread cools, prepare the vegan cream cheese frosting by whipping together the vegan cream cheese, melted vegan butter, and powdered sugar using a hand mixer until smooth and fluffy.
- Serve: Drizzle the vegan cream cheese frosting over the cooled loaf for added sweetness and creaminess. Alternatively, enjoy a warm slice simply with a pat of vegan butter if you prefer.
Notes
- You can substitute regular all-purpose flour with gluten-free flour to make this bread gluten-free.
- Frozen blueberries can be used when fresh blueberries are out of season; no need to thaw before adding to the batter.
- If the bread top browns too quickly, covering with foil helps prevent burning while the inside finishes baking.
- Ensure bananas are very ripe for the best natural sweetness and moist texture.
- The frosting is optional and adds a richer flavor, but the bread is delicious on its own or with vegan butter.
