Ingredients

Scale

Streusel Topping

  • 3/4 cup packed light brown sugar
  • 1/2 cup self-rising flour
  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1 cup uncooked old-fashioned oats
  • 1/2 cup chopped pecans

Filling

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract (optional)
  • 1/2 cup (1 stick) butter, melted
  • 4 ripe bananas, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a 2-quart or 9×9 inch baking dish by spraying it with nonstick cooking spray to prevent sticking.
  2. Make Streusel Topping: In a mixing bowl, combine the brown sugar, 1/2 cup self-rising flour, and softened butter using a fork until the mixture is crumbly. Stir in the oats and chopped pecans until they are evenly distributed. Set this streusel mixture aside.
  3. Prepare Filling: In a separate medium bowl, whisk together the remaining 1 cup self-rising flour, sugar, and milk just until blended. Add the melted butter and, if using, banana extract; whisk gently to combine. Pour this batter into the prepared baking dish.
  4. Layer Bananas: Arrange the sliced ripe bananas evenly over the filling in the baking dish, covering the surface.
  5. Add Streusel Topping: Crumble the prepared streusel topping evenly over the bananas, ensuring a good coverage to create a crunchy layer once baked.
  6. Bake: Place the baking dish in the oven and bake for 45-50 minutes, or until the topping is golden brown and the filling is set without any jiggle when gently shaken.
  7. Serve: Allow the banana cobbler to cool slightly before serving. Optionally, serve warm with a scoop of vanilla ice cream and additional banana slices for an indulgent dessert experience.

Notes

  • You can substitute chopped walnuts for pecans if preferred.
  • If self-rising flour is unavailable, substitute with all-purpose flour plus 1 1/2 teaspoons baking powder and 1/4 teaspoon salt for each cup.
  • Banana extract is optional but enhances the banana flavor in the cobbler.
  • For a gluten-free version, use a gluten-free self-rising flour blend.
  • Store leftovers covered in the refrigerator for up to 3 days; reheat gently before serving.
