Instructions

  1. Prep the fruit: Wash, peel, and chop your fruit as needed. Blend until completely smooth to create a fine purée that will be the base of your roll-ups.
  2. Sweeten and balance: Add the honey and lemon juice to the purée, then blend again thoroughly to evenly distribute sweetness and acidity throughout the mixture.
  3. Cook it down: Pour the fruit mixture into a saucepan and simmer over low heat for 15–20 minutes, stirring frequently, until the mixture thickens slightly, concentrating the flavors and reducing excess moisture.
  4. Spread and bake: Prepare two baking sheets lined with parchment paper or silicone baking mats. Evenly spread the thickened purée onto the sheets to about 1/8-inch thickness, ensuring a uniform layer for even drying.
  5. Dry it out: Bake the sheets in a preheated oven at 170°F (75°C) for 4–6 hours, or until the fruit leather is no longer sticky to the touch but still pliable for rolling.
  6. Cool and roll: Allow the fruit roll-ups to cool completely on the sheets. Once cool, cut into strips and roll them with the parchment paper for easy storage and snacking.
